As far as knitting goes, you will need some yarn (get at least two colors: the more colorful the better, and even if you can't get a good pattern going, mixed up colors still looks pretty cool) and two long (about fourteen inches) knitting needles. There are a lot of stores that focus specifically on knitting and different kinds of crafts, and you could even get eco-friendly yarn. But if that sounds too specific for your area, most Wal-Marts have craft sections. This yarn, for example, is really cute.
I would suggest searching the internet for or buying a pattern for the kind of hat (I am thinking "beanie" style) that you will want to knit. This site and this site have great instructions, though it is kind of hard to understand what you are doing until you do it.
So, I'll try to break it down. Start knitting. You will need to have tight stitches when making something like a hat, make it in a circular design, but not initially. Like the aforementioned site, showed, patterns are supposed to be mountain shaped slits. Remember to make the sides have a good give. You might need to double stitch until you get the hang of having things tight enough. You might want to use a mannequin head to help with the design and shape - you do not want to make a hat too big or too floppy, but that will probably happen the first couple of times, anyway. Also, make sure you know your head size (or whomever you are making this for) so that you can get it as close as possible.
Knitting is really tricky, and I would go as far to say that it is more difficult than sewing because you are making the cloth yourself. Practice the different kind of stitches and practice the motion of knitting itself, which takes practice (think the difficulty of chopsticks multiplied by ten). I hope that you stick with it until you figure out exactly what you are doing. It is totally worth it. My advice is to Google instructions and then knit some. The Google some more instructions and knit some more, and then, somewhere in the dark, come out with a totally awesome winter woman's beanie hat.
